04/26/06 		The most traditional is a Lexington (NC) type vinegar slaw. A creammy or slightly sweet slaw is usually mare popular with teens- you need 20 pounds of cabbage to make slaw for 200, there are lots of recipes on this site.

04/27/06 		Lexington Slaw is made by adding some ketchup.
Cole Slaw is best if it has had an hour or two in the refrigerator for the flavors to combine.
This is the classic cole slaw used for topping pulled pork sandwiches.

> > > * 2 cups shredded cabbage
> > > * 2 tablespoons minced onion
> > > * 2 tablespoons white vinegar, cider vinegar or rice wine vinegar
> > > * 2 tablespoons mayonnaise
> > > * 1 clove garlic, minced
> > > * 2 teaspoons sugar
> > > * 1 teaspoon ground black pepper
> > > * 1/2 teaspoon salt

PREPARATION:
Mix all ingredients together and refrigerate for about an hour. Place a generous portion on each pulled pork sandwich.
OPTIONAL 1/4 cup shredded carrot or 1 shredded red bell pepper

100 pound med. chopped cabbage; (1 lb.)
> > > 6 quarts ketchup; (4 tbs.)
> > > 10 pounds sugar; (3 tbs.)
> > > 1/2 gallon vinegar; (4%) (1 tbs.)
> > > 8 ounces salt; (1/2 tsp.)
> > > 8 ounces pepper; (1/2 tsp.)
> > > 1/4 teaspoon ground red pepper

How many heads of cabbage will I need for cole slaw for 60 people? pounds of cabbage for 60 people. I will shred it myself with my machine.

10/13/06 		I like cole slaw and allow 20 pounds cabbage for 100 people. If you shred it the day before, it will shrink and release quite a bit of liquid, so let it do this before you put on all the dressing, or the dressing will get too thin.
