raspberry viniarette dressing for 150 people

100 people need 3-4 quarts of dressing. Raspberry viaigrette can be made slightly thicker by blending in sour cream, mayonaisse, half and half or egg yolks, I like it plainer and not too sweet.

To make 2 cups of raspbarry vinegar:
3 cups raspberries, washed and carefully dried
1 cup good Japanese-brewed rice vinegar or champagne vinegar DO NOT use balsamic
1/4 cup sugar
1/2 cup water
Smash all together such as in a blender, Strain out the seeds, Store capped in the refrigerator.
