I am making Chicken Pasta salad for lunch for my daughters softball team. This will be right after they have had a practice and they will all be starved. This salad has chicken, campanelle style pasta, broccoli, olives and cheese cubes in it so it is pretty hardy. I am not sure how much to make for this large of a group. Your suggestions would be great. Thank you! |

You want about 4-5 ounces of cooked boneless chicken and 2 ounces of cheese for each girl- multiply your recipe and the rest of the ingredients to get these amounts. Don't forget LOTS of fluids- preferably not just sodas. Unless you are pretty sure of the girls' tastes. you might substitute grape tomatoes (whole) for the olives and serve the olives on the side. |
