We are doing a Mexican theme dinner for about 80 people with King Ranch Chicken Casserole, chili, salad, some veggies, etc. I am finding different quantities for the chicken casserole, from 9 cups chicken to 10 quarts. Can you please tell me how much chicken I need for this? I can adjust the other ingredients accordingly. Also, I will be using 12x20 buffet pans, how many will I need? Thanks. |

12x20 pans serve about 20. For 80 people, consider making 5 pans if they will be hungry. I would use 1 pound (2 cups) of meat for each 4-5 people. You have some choice on how meaty you make it. If this save you time, trouble, or money, please make a small donation to support this site. Thanks. |
