I was wondering if anyone has experienced what I did when I made a batch of Ellen's Hunky Monkey Vegan Breakfast Bars. In less than 24 hours, the outside of the chopped sunflower seeds in the bars have turned quite green. I modified the recipe some to suit my dietary needs, so I'm wondering if that could be the cause of the problem. Basically, I substituted Agave Necter for the fructose, rice protein powder for the soy powder, and I added 1/2 cup of oat bran. I just tried eating one, and it tasted fine, so I'm not sure whether or not I should throw out the rest of the batch. |

This is absolutely a new one on me- lots of people use this recipe. Was this a batch of seeds you have used in anything else? Did only the seeds turn green? |

I've only used this batch of seeds for snacking on. Yes, only the seeds turn green. Since it's only the outside of the seeds that are turning green, I'm going to assume that it was one of my substitute ingredients that caused the reaction. I forgot to mention that I also substitued some unsweetened applesauce for the liquid. It's no problem, I'll just make the next batch without the sunflower seeds. |

I have learned that when baked in an alkaline bread, seeds that are high in a natural chlorophyl compund turn green. Not harmful. |
