I am helping out with my son's fraternity catering for Wesleyan's 175th birthday and graduation for about 300 people breakfast, lunch and cocktail party. Breakfast will be around 9 am ,lunch is around 12 noon and cocktail is from 5pm to 7 pm. I thought the above menu was appropriate for lunch so can you fill me in the estimates for food shopping list . I need ideas for breakfast and as well for cocktail hour. |

Hi, Sandy, You don't say what the budget is, what the cooking facilities are and how much will be ordered catered in or bought pre-prepared, and all these things substantially affect the menu selection. But here are a few thoughts: The base of the breakfast could ber roaster caseroles of breakfast casserole with eggs, hash browns and bacon ot ham, or perhaps breakfast tacos. Both the lunch and the evening event are over mealtimes and you will need 1 1/2 pounds of food per person, minimum, especially with college guys, who eat just about double what regular adults eat. You will want big crockpots of hot dips and platters for the evening event- they will basically be eating supper. For lunch, read the sandwich event page and prepare ampunts based on teenagers. Have some hot sides like baked beans, hot potato salad, etc. |
