Hi, I am needing to prepare a holiday dinner for about 130. I would like to do something a little bit different, yet still good for the holidays. Any ideas.....Thanks |

What about a chicken and seafood paella? Some beautiful stuffed whole salmons? Stuffed halves roasted Cornish Game Hens? What is your kitchen situation, staff and budget? |

The kitchen and staff are basically none. I have no real help, and just a standard home kitchen. Actually I will have two home kitchens to work from. They're not sure of the location, so I am going to assume that I don't have any holding facilites. I had thought about a pork loin stuffed with prunes and cranberries, a wild rice with cranberries, and maybe a ratatouille. Any suggestions...need any changes?? |

You need at least 8 people to handle this meal, even with buffet service. Plus the cooking time/ preps. You need some Nesco roasters to keep hot and safe. |
