I'm looking for an easy recipe for chicken marsala for 125 people. Any ideas?

Thewre are two chicken marsalas, one is Indian/curry type and one is wine and mushroom type. Which do you need?

The wine and mushroom one. Hopefully something easy that can be partially prepared ahead of time. This is for my in-laws 50th wedding anniversary. If you have any other suggestions as far an easy, inexpensive chicken breast recipe I'd love that too! Or any other easy meat recipe. We have the commercial kitchen for the entire day, but would love to have some time to enjoy the party too! Also, if we have a baby green salad, a pasta, or rice and a roll, do we really need a veggie? I have until next month to get the menu together but will be losing sleep till then! Thank yo so much!

I would use a baked rice recipe for ease and convenience. And chicken and rice is a pretty empty plate. What about broiled/ grilled vegetables? Again, pre-slice and dice the veggies and using the oven with minimal time spent.

Have you checked the frozen entrees at Sam's or Costco? Or any good restaurant supply grocer. Try now, very easy prep later.

Do you have a baked rice recipe you can reccommend? I'll check Costco, but all I have seen is the mesquite broiled chicken. I really want to keep things very elegant. Originally I thought I would go with the plain chicken breasts baked with some sort of lemon sauce, but don't know where to look for a recipe big enough for that much sauce! What do you think of a frozen green bean steamed with a buttery sauce? Or would they taste frozen?This has nothing to do with anything but might help someone save some money for their next big function. I have purchased 120 place settings of of mis-matched off white dishes....all very beautiful. I found buying used dishes to be less expensive than renting. Also went on line to a supplier and bought water goblets and flatware, again cheaper than renting. For what it's worth! Sorry, I'm in panic mode thus the rambling!

How about a lemon chicken recipe, using boneless chicken breasts? With a baked rice that would compliment. And some really easy veggie, like maybe the green beans I mentioned. At least frozen green beans retain their color. Been surfing since last post and it sounds like it might be easier than marsala. Did I mention that this party is three hours from our house? We have lot's of friends who have voluntered to help. One of which used to manage and cook for several resteraunts. Thanks so much!

At Sam's they have chicken kiev (syuffed with Swiss and ham, one with broccoli and cheese and Marco Polo, with ham broccoli and cheese, these hold better because of the saucy filling-

There is a baked rice recipe on the recipe box page and several in the rice side dishes on the Big Pots page.

I would go with the roasted veggies, more unusual , prettier and less likely to overcook. Or fresh steamed- these could be trimmed the day before-

Oh yeah, there is no dish washer! Lots of friends with lots of dish pan hands! :)

And there isn't a Sam's Club for another 150 miles! We do have a Costco, I'll check that out.
