Hi Ellen.. I'm making salmon for a party of 70. I'm planning on 1/3 lb pp. Do you have a recommendation as to how to prepare ahead? I'm OK with serving it just warm or room temp. Thanks! Joe |

Chilled, steamed salmon is a traditional summer dish, do not serve room temp. Steam perfectly day before and serve with mayo and capers among the garnishes. |
