First, a heads up. A party this size takes about 3 people in the kitchen and about 12 people out front to set up, serve, and clean up. None can be part of the the wedding, as they will be working during the service.

crab dip-3 gallons
crackers-12 pounds (probably some left)
cheese dip-3 gallons
chips-1 pound per 12
fruit tray- use the fruit tray page; 1 1/2 times the deluxe tropical tray, or equivalent, would be about right.
veggie tray- use veggie tray page, do for about 150, or consider doing the classic relish tray x2 instead
dip- Ranch, discussed on the veggie tray page
cheese tray- about 18-20 pounds, some could be logs or balls, use crackers above

BBQ Pulled Pork-about 40 pounds
yeast rolls-1.5 per person if large, or 2 smaller
BBQ sausages-about 40 pounds
You also need something to serve as and entree for non-pork/ non-meat eaters- with 200 guests there will be some. Field roast is the brand name of an excellent vegetarian sausage- do about 18
jambalaya- about 10 gallons
corn- 44 pounds
green beans-44 pounds
pasta salad- 12 pounds dry pasta plus add ins. Many recipes on this site. Make it meatless.
For BBQ pork, consider adding 5 gallons cole slaw

punch- with appetizers, 10 gallons
tea-12 gallons, 1/3 unsweetened
water - 2 bottles per person
ice, about 1/2 pound per person

People really enjoy dinner level coffee with dessert. Estimate your number of coffee drinkers and use the beverage planning page.
