Amounts for Celebration of Life

Hi Ellen - I wanted to verify my amounts and had questions on alternatives for celebration of life - its on Sunday 2-4 pm. We are expecting around 150 to 175 p

Sandwich rolls from Costco - 400

Turkey, Ham (black forest) & Roast Beef - buying whole from Costco and slicing w/machine ourselves - 1 each?? I had at least a total of 20 lbs

Cheese - Cheddar, Havarti & Swiss - was going to buy the pre-sliced & cut diagonally - 2 each of the Costco packages (would it be better to slice ourselves from a bulk piece??) at least 10lbs total

Pasta Salad - using bulk recipe from Growlies- serves 120 - will have a few smaller backups that friends have offered to bring

Bean Salad - large jar from Costco

Asian Chicken Salad - friend making - told her we needed a large size

Meatballs - 15lbs w/Teriyaki Sauce (heated before in roaster to temp, then transferred to chaffer as needed)

Sausages - ??? w/BBQ Sauce - lil smokies or cut up kielbasa? lbs?
Also heated in roaster and transferred to chaffer as needed

4 bags Kettle chips from Costco

3 veggie platters from Costco - was thinking of replating to large platters for aesthetics?

Olives/Pickle tray from your site for the 50 to 60 people

Lettuce for décor on trays

mustard/mayo

desserts - cheesecake squares, brownies, cookies and oreo cupcakes (these are being made by friends of family)

Salt & Pepper

beverages: Coffee (in large maker provided by hall), Punch (recipe doubled for 120), pitchers of water w/ice

I catered my own wedding for 350 so I have trays, chaffers, baskets and other serving items - just really needed the amounts verified since this is not really a meal but just "a little something" people can snack on. I have lots of helpers as well.

I'm planning on having everything done before we get to the hall - just bringing it in a setting up (we only have an hour before service starts)

I did give you a small donation already - I really like your site but have never posted before...lurked for years! This is for my father in law that passed Saturday

Sandwich rolls from Costco - 400- 300 plenty

Turkey, Ham (black forest) & Roast Beef - buying whole from Costco and slicing w/machine ourselves - 1 each?? I had at least a total of 20 lbs. You need 20 pounds of meat, about 1/2 turkey and 1/4 each beef and ham is pretty usual.
2 bottles of mustard
2 quarts of mayo

Cheese - Cheddar, Havarti & Swiss - was going to buy the pre-sliced & cut diagonally - 2 each of the Costco packages (would it be better to slice ourselves from a bulk piece??) at least 10lbs total- 10 to 12 is great

Pasta Salad - using bulk recipe from Growlies- serves 120 - will have a few smaller backups that friends have offered to bring6-7 pounds dry pasta

Bean Salad - large jar from Costco- 2 gallons

Either of the below is fine, you don't need both- or do 10 of each
