Holding an event for 480 people. Was planning a buffet of prime rib and chicken picatta. How much of each meat should I prepare? Will also have three sides, salads, desert, etc. Thank you! |

Deluxe dinner. Plan on 12 pounds raw boneless prime rib per 5 plus 1 pound boneless chicken per 4; make sure the chicken medallions are small (2= normal serving) as many of the beef eaters will also take one. Be sure to have servers for the meat at each of the 8 lines you will need to serve the buffet. You can do a double sided line with one meat server if the space permits.
