Hi Ellen, we are helping make food for a wedding. One of the items on the menu is onion bacon marmalade. I was wondering if you thought I could caramelized the onions in a roaster oven? I have to do 36 lbs of onions in bacon fat. |

Use a regular oven and make ahead, the roaster oven keeps it too moist for good caramelization. |
