I'm catering my own wedding reception (God help me)... I need a good mashed potato recipe to serve 60 people... Also could someone help me as to find out how much roast beef I should purchase to feed 60 people and a good recipe for that too....

Stephanie, at the risk of being profane, you need more help than God. The one good thing you have going for you is, the party is not too big.

Please read the article on catering your own wedding in Big Pots. You need to recruit the 3 best cooks you know to do theprep and the cooking, and you need to have 3-4 addtional the day of the wedding to do the serving. Do not even THINK about doing it sit down, you need to go buffet, with the drinks/beverages on the tables, possible also desserts.

A prime rib dinner catered is about $30 per plate, which means you must expect to budget about $10 per person for the food, plus rental of all the tables, settings, etc discussed in the article. Seriously consider a non-meal dessert or tea reception and having the many guests over to your new house 6-8 at a time during the year to come for dinner.
