How much spinach do I need for 60 people. This is a side only. Also is there a simple strawberry vinaigrette to go along side - quantity the same for 60 servings. THANKS |

1 pound makes about 16 side salad servings, so about 4 pounds. This usually has about 1 1/2 pounds thick sliced strawberries (4-5 cups) and 1 1/2 cups (10 ounces) toasted pecans. A simple strawberry vinaigrette is 5 parts strawberry vinegar to 6 parts olive oil, and for the pound above that would be about 7 tablespoons vinegar to 9 olive oil. A sweeter dressing would use 1/2 the vinegar and replace the second half with honey or agave syrup. You can also add mandarin orange pieces and/or a little chopped green onion to the salad itself- just depends on which direction you want the flavors to go. |

You make strawberry vinegar by blenderizing a pound of trimmed strawberries in 2 cups of white wine, champagne, or white balsamic vinegar, letting it sit for at least an hour, then straining out the strawberries. |

Quickie method method- use strawberry jam in place of fresh berries- 3 tablespoons of jam for ever 4 of vinegar. |
