Cooking Lunch for 40 People

Hi Ellen,

I am cooking a lunch from 1-3pm for 30 people for my daughter's baptism. I had planned to do:

4 Appetizers - deviled eggs, popcorn, 2 types of crostini and a roasted vegetable skewer

3 Salads - 1 pasta, 1 vegetable medley and one mixed green

2 Types of DIY Sandwiches - 1 roasted turkey and 1 chicken salad on mini slider rolls with condiments

Possibly 1 Dessert

First of all, does this sound like enough options?

Secondly, and more importantly, I am unsure of the amounts to purchase for the sandwich meats. I was planning on purchasing a whole turkey, brining and roasting it, as well as whole chickens to poach for the salad. Can you please help me to decide how much to buy? It's giving me anxiety as I am afraid I will not have enough!

Fine menu.

1 pound whole chicken or turkey makes 1 cup meat, which usually makes 2 cups salad. You want to plan 1/2 pound whole poultry per person, since some will be added to with salad ingredients.

Definitely do dessert.
