Hi there. I just got a soy milk maker, and am looking forward to trying some interesting things with the okara. I've read the terrific page on this site about okara, and I just have a couple of questions about the nutritional information posted there. First of all, in the table comparing okara and tofu, why is the information about okara different between the left-hand column and the right hand column? And, in the right-hand column, what is the difference between "carbohydrate fiber" and "total dietary fiber"? Any clarifications that anyone can provide on this would be greatly appreciated! |

The info on the left is USDA; the info on the right is from a Japanese university study. As you probably noticed already from your new machine, okara texture and therefore concentrations and values, vary a lot depending on how it is extracted. For example that from the machine is more concentrated than that hand pressed from traditional methods. So the results vary. Some fiber has a carb structure, gels, such as oat bran; others are cellulose, such as wheat bran. They act rather differently nutritionally. Total fiber includes all kinds. |
