Crystal, I don't know how big your trays are, they come in different depths, hold 7 to 24 quarts... I need the whole menu to do a mixed estimate. |

2 large sweet potatoes or yams 1/2 cup sugar or splenda 2 Tablespoons margarine 1/2 teaspoon cinnamon 1/2 cup milk 1 egg Marshmallows giant oval rack roaster 16in.x131/8in.x3/18in. |

This is the equivalent of 4 9x13 pans, will serve about 30. You need about 10 pounds of sweet potatoes per pan. |
