Heather, it is necessary to have a budget, description of the kitchen and serving area, staffing (volunteer? paid? how many?). You are talking 4 to 6 full serving lines for buffet. Seating could be at 8-10 person round tables, 6-8 person rectangular tables. You need about 5-6 kitchen staff, a manager, and 18 servers minimum to staff this size dinner; that is $2400- 3000 just for the staff. Write back please. |
