I'd love some feedback on a bbq I'm doing for in-laws retiring. Total is 90 adults 25 kids. I plan on preparing:

Looks good. You do not need more than 2 hot dogs per kid- with all the other meats even 1 1/2 would be plenty. And with this menu, 15-18 pounds of burgers would be way plenty. Actually, you could omit the burgers or the pork or half each and still have enough, you have 100 pork sandwiches and 100 burgers and about 100 servings between the chicken and the hot dogs. Of course, you can freeze any leftover pulled pork in zippered freezer bags in family size servings and also flash freeze the grilled burgers on a cookie sheet, bag them, and then enjoy them on a day you don't feel like grilling. You will be long on macaroni salad, I suggest you increase potatoes to 30 pounds and lighten the menu by replacing either the mac or the pasta salad with some kind of marinated vegetable salad, such as 4 bean salad, my marinated artichoke/ olive condite, cherry tomatoes with cukes and feta or mozzarella, etc- something that is for the low carb eaters in the group. Or simply serve the ever-present finger veggies with Ranch dressing dip- even the kids like it. On the chili page in the Big Pots section there is a recipe for spiced up pickles that would go great with this menu. Check with a few local bakeries about getting really god buns. When you make this kind of effort, the meat deserves good bread. |
