If you look under budget entrees on the Big Pots page, you will find a vegetarian stack enchilada recipe (made in large cassseroles) for 100 people. You would want 25 pounds cooked seasoned ground or shredded beef (that is 35 pounds or so raw) added to this recipe for simple beef enchiladas for 100, so you will incease verythying by 1/4 to serve 125. |
