Cooking for 60-80

Hi,
I'll be cooking for a large group next saturday. I' ll be making a sausage chicken thigh and red peppers wig tomatoes dish served over rice. How much of the ingredients should I buy? Salad and garlic bread will complete the main course with sheet cake for dessert.

Please advise.
