I'm coordinating a dinner at my church. I plan to have a spinach salad, cheesey scalloped potatoes, steamed broccoli & carrots with pumpkin roll for dessert. I want to serve a baked chicken breast that's not just ordinary. Any suggestions. |

The orange dijon wedding chicken on this site is tried and true and very tasty. Also it holds much better than plain baked chicken. Try a family size recipe and see what you think. |

Thank you I will try this recipe soon. Do you have an easy rice pilaf recipe? With my menu, is rice needed. This is a fundraiser dinner and I want it to be good but also not so costly. I'm using canned potatoes for the cheesy potatoes. Should I use fresh or frozen broccoli. How would you suggest cooking so much broccoli. Thanks. |

Frozen broccoli, and you might consider a broccoli rice casserole, since you also have another vegetable. It would be good with the chicken. Look into frozen hash browns for the cheesy potatoes, the cost may be comparable, and they taste better. If you do a plain rice pilaf, use the baked rice guideline from the recipe box page. |
