I was at a large outdoor event today that was serving BBQ turkey legs. They sold over 2000 of them but were absolutely horrible and there were piles of uneaten ones. It looks like they were maybe parboiled, cooled and then re-boiled in salt water to warm them back up and then dipped in BBQ sause and put on the grill to finish. The end result was a tough leg that was horribly salty. What would be the correct way to prepare turkey legs for vending that would turn out good? thanks ! |

Turkey is easy to overcook and dry out. Fresh roasted is very good. Crock pot style cooking with the sauce is also an option. |

Fully grilling raw turkey legs with no precooking takes 2 1/2 to 3 hours. This is one reason many people sell smoked turkey legs. Oven roasting, at 375 they take an about an hour, or 1 1/4 to 1 3/4 at 350.. |
