i need to serve chicken picatta there is no kitchen on site i must cook it an bring it there and serve in chafing dishes how long will it hold with out getting tough can i per cook and re warm in chafing dish |

Chafing dishes are not safe to use for rewarming, they don't get hot enough. Look into renting the pro caterer's solution, called "cambros", they are large plastic cases which are preheated and will keep food safely hot for up to 4 hours. The idea is, you MUST keep the meat at 160 or below 40 to avoid bacterial growth. Toughness is more a question of not overcooking it. To keep juicy, be sure to brine the raw meat before cooking it. |
