Yes, but did you look at the quantities on the bread/rice pudding recipe posted in Big Pots, you might be able to do this yourself.

I get a little lost trying to figure this out. I'm sorry. Here is the recipe:
2 day-old French baguettes, cut in cubes
1/2 cup golden raisins
1 apple, peeled, cored and chopped
1 banana, diced
1/2 cup chopped walnuts
3 eggs
1 cup sugar
1 tbsp. cinnamon
1 1/2 tsp. nutmeg
1/2 tsp. ground ginger
1 tsp. vanilla
1 cup milk
1 cup heavy cream
Makes 9 x 13 pan; serves 6 - 8

OK, Assuming this is 2 pounds of bread. Also, most people cut 10 or 12 to a 9x13 pan.

I would do 20 times

40 pounds-2 day-old French baguettes, cut in cubes, 2 pounds
10 cups- 1/2 cup golden raisins
20 apples (about 7 pounds) 1 apple, peeled, cored and chopped
20 bananas-1 banana, diced
10 cups walnuts- 1/2 cup chopped walnuts
5 dozen- 3 eggs
20 cups (a little more than 10 pounds) 1 cup sugar (1 might use part brown)
1 cup- 1 tbsp. cinnamon
3/8 cup-1 1/2 tsp. nutmeg
1/4 cup- 1/2 tsp. ground ginger
1/4 cup- 1 tsp. vanilla
5 quarts- 1 cup milk
5 quarts- 1 cup heavy cream
(you might just use 10 quarts of 1/2 and 1/2)

I woud mix the custard portion 1/4 at a time.
