I am serving chicken salad on mini-croissants at a meeting, as a light snack, along with chips, salsa, pimento cheese dip, crackers, and cupcakes. The number attending will be 15(12 women, 3 men). How many pounds(quarts) of chicken salad would you suggest that I need? |

2 to 3 quarts is plenty. Make sure the celery is finely diced. |
