Cooking on an electric stovetop

I am moving to an area that only has electric ranges. I am concerned about how this will affect my cooking. Is it difficult to adapt, and how does the food come out? Are there any sites that offer guidelines to convert stovetop recipes?

You will burn things for a while, but you will learn.
To heat the burner fast turn to high. This heats both coils. As soon as the right temp turn down to lo-med unless all you are doing is boiling water.
If you need to go from med to hot quickly or vice versa, turn on two burners, the timw for up and down is very tiresome and contributes to the troubles.

My fiance and I heard that the best cookware in terms of healthy cooking includes glass, stainless steal and terra cotta. Do you have any suggestions and could you recommend particular brands.

I like all these, enamaled cast iron is also very safe.

I recently purchased a new smooth-top electric range. After looking at your column about Visions cookware, which I would like to cook with, I noticed you mentioned some brief comments on the safety of using Visions. What would those safety percautions be?

According to what the stove manufacturers told me, they no longer recommend Visions for their smooth tops. Check the owners manual.

The discussion around Visions safety has to do with several documenetd incidents where the pans shttered, in a few cases they were not in use and were not hot or dropped, they just basically forcefully broke apart, causing injuries, sometimes very serious.

If you do use Visions, the recommendations include never scouring , discarding the pan if it is ever burned dry, and discarding if it is chipped, cracked, or scratched/gouged. Also, never heat it empty and never put the hot pan straight off the burner into water or dishwater.
