Party potatoes

I am looking for a recipe for Party Potatoes to serve 100. We would like to be able to cook the potatoes in a roaster. These are the potatoes that are made with hashbrowns and have cheese in them, with the corn flakes on top.

Known as Mormon Potatoes, Ward Party Potatoes, Funeral Potatoes, Southern Party Potatoes, Easter Potatoes and many other names, these are pretty simple. Keep the layers totalling 3 inches or less.

Recipe makes 9x13 pan, you need about 9-10 pans for 100 people.

1 package (approx. 2 pounds) frozen hashbrown potatoes
1 to 4 tablespoons butter
1 tsp. salt
1/4 tsp. black pepper
1/2 onion, finely chopped
I usually grate in 1 cup bell pepper
2 cups sour cream (may use low fat or fat free sour cream or yogurt)
1 can Cream of Chicken soup (vegetarian, use cream of mushroom or cream of celery)
2 cups (1/2 pound)grated cheddar cheese (may use a mix of cheeses, I like some Swiss or jack and some PARMESAN in this)
2 cups crushed Corn Flakes
2-4 TABLESPOONS melted butter

Thaw potatoes. Combine butter, salt, pepper, onion, sour cream, soup, and cheese. Pour into well greased 3 quart casserole dish or two 1 1/2 quart dishes. Mix cornflakes and melted butter together sprinkle over potato mixture. Bake at 350* for 45 minutes. This casserole may be baked and frozen and then reheated to serve.
