How may pounds beef tenderloin, cold shrimp and chicken salad for 100 people for a buffet? |

Both the shrimp and the tenderloin are premium items that inspire gluttony. If you have someone carving and serving ("Would you like shrimp or beef?"), you can cut down a bit, but if it is self serve, figure 2 pounds raw tenderloin per 5 people PLUS 3-4 shrimp per person, PLUS 3 ounces chicken (1 small breast piece) per person. Yes, it is a lot, but folks really gobble these items. |

Sorry, I should have said beef tenderloin served on rolls (sister sherbert size) cold shrimp, and chicken salad on endive leaves. Plus fruit tray, cheese tray, salsa/chips, wedding cake, etc. For a 50th anniversary (3:00-5:00 pm) 100 ppl /buffet. |

That, especially the time, makes a big difference. 1 pound tenderloin for 4, 3 shrimp per person, 1/2 cup chicken salad (which takes about 2 ounces of chicken. |
