We are feeding 200 people smoked chicken leg quarters and brisket...how much of each do I need to buy? |

What I would do, is cut the quarters into 2 pieces after cooking, especially if it is self serve. Then do at least 40 pounds well trimmed raw brisket- 50 would not be too much... |
