I am not sure which is better: Making up muffins in bulk or making a bulk mix to make them as I go, or both.

I have four growing girls and their two brothers and their daughter-in-law tend to drop by at odd times. They need to be able to grab snacks, either muffins or packaged slices of dessert loaves (whole grain vegan fruit loaves) to have for breakfast, fast grab snacks for school or after school.

It needs to be a BIG quantity recipe or one I can figure out how to double pretty easily. I'd prefer whole grain.

Thanks so much.

First for a whole grain mix check out the whole grain deluxe pancake and baking mix on the big pots section, its deliciuous, and the angel biscuits recipes have LOTS of ideas and variations for using the mix.
All the fruity-type (applesauce, banana. carrot) muffins freeze well. Also, I have had good luck freezing regular size muffin in the paper cups UNBAKED (still liquid) and baking fresh.

The recipe form for giant muffins on the recipe box section has a basic formula for any kind of muffin. Just remember that small light muffins use a fast blast of heat to bake, where larger and heavier muffins use a quick bread loaf type heat.

This is a great page. And the contents are really that worth reading. I will add this to my own library
