Preparing food for son's wedding reception. I read Wedding Dinner link...very informative. Have lots of help. Fellowship hall has 1 industrial fridge and 2 industrial stoves/ovens. Will use many crockpots/steam pans. Wedding at 2 pm. Menu son wants: >Potato Salas - 8 gal >Baked Beans - 5 gal >Canned corn - 5 gal >Canned fruit cocktail salad - 2 batches >Chopped pork bbq - 65 lbs (purchased in advance) >Cole slaw - 5 gal (purchased) >Hamburger rolls - 240 ...is this enough bbq and side amounts? Will serve food for portion control. Will have appetizers (salami slices/cheese/crackers, chips/salsa, brownies/cookies & veggies/dip) which we can calculate from your site. Your assistance will be much appreciated. I love reading the Cook's Chat Forum...have learned alot. Thanks! |

Because many will eat before coming, this should be fine, but not much leftover. I would probably do 70 pounds of meat and 1 more gallon of slaw. Be sure you have 200 servings of the fruit cocktail salad; nearly everyone will have it. I kind of like the idea of potato salsa, might have to play with that... |
