Hi Ellen! My husband's been asked to cook for a picnic with 250 people. I have no idea of how much meat or side items he should cook. Can you please advise. The menu is:
Ribs, Brisket, Sausage, Baked Beans, Dirty Rice, Coleslaw, Potato Salad, Cakes, Peach Cobbler, and Banana Pudding.

A party this size requires 4 people minimum continuous at the grill.

Ribs, Brisket, Sausage; if this is buffet style and seconds are offered/allowed, you need at least 1/2 pound raw ribs per person PLUS 1 pound raw lean, trimmed brisket per 4 people, PLUS 1 pound smoked sausage per 5 people. That's minimums. BBQ customers are big meat eaters. Your husband should also get a case (24)of veggie burgers (Boca, Morningstar) for the non-meat eaters.

Baked Beans, Dirty Rice, Coleslaw, Potato Salad, are each covered in detail in the plan for 100 lists.

Cakes, Peach Cobbler, and Banana Pudding. Hard to estimate the split without knowing where you are; banana pudding is much more popular in the south, for example, than in the northeast. See the dessert planning list, make about 100 servings of each. Buffet service, people do take 2 desserts.
