We are having a graduation party of 130,mainly adults on a Friday night. I am making 72 chicken enchiladas, rice and bean salad, orzo salad and corn, avacado and tomato salad. How much taco meat do I need? How much chicken do I need for fajitas and the ratio of peppers and onions. Do you have a good marinade for the chicken fajitas? Also, is there a good way to keep the fajitas on a buffet? Thanks Susie |

There is a thread. all about fajitas, which you should read. You use 1/2 chicken, 1/2 mixed peppers and onions. Doing a mixed bar, you need to allow at least 1 enchilada per person PLUS 1 pound raw boneless chicken for each 4 PLUS 1 pound raw burger for each 4-5 (more gets eaten if beer is served). |
