Meat Quantity

06/08/10 		We are cooking for approx. 275 people. They would like Tri-tip, Pulled Pork and Chicken. How do we know how much meat to cook? Obviously, we are not going to cook enough meat to have 875 servings, so how do we figure our meat quantity when we will not know in advance who wants what type of meat?
