cold luncheon for Graduation open house, expecting to feed 125 people.party time is set for 12:00 -? (close family will stay for lunch and dinner)
this is what i have planned for, i still have 3 weeks so i can add/decrease as needed.

15lbs shaved deli ham
15lbs shaved deli turkey
10lbs shaved roast beef
4lbs of sliced cheddar
3lbs of sliced colby
3lbs sliced provolone
3lbs sliced swiss
3lbs processed american
* all deli cheeses will be cut into triangles
12 dz/144ct assorted dinner rolls ( plain, seeded, whole wheat, rye)
5 dz mini crossiants

5lbs greek pasta salad
5lbs bacon broccoli salad
5lbs super salas ( ham and cheese)
5lbs taco pasta salad

sandwich condiments - 1 head of shreded letace, 1 3 lbs bag of onions, mayo, mustard & butter.
20lbs assorted veggies ( baby carrots, broccoli, califlower, mushrooms, cucumber or radishes)
3 cans black olives
3 jars baby dills
20lbs assorted fruits ( green & red grapes, cantalope, strawberries, blueberries, mabye watermelon)
72 bags of chips ( indivdiual size)

100 servings of cake ( lemon poppyseed, red velvet marble)
48 chocolate cupcakes
4 9x13 pans of rice crispy treats
3 9x13 pans of brownies

12- 12 pks of soda ( 144 cans)
2- 24 pks of bottled water
40 cups of coffee

do i really need the chips? will the pasta salads be enough of a filler? we are only expecting about 20 children, and 10 teenagers - the rest will be adults.

Many areas look good, but there are some gaps and cautions:

Meat and cheese- OK but for one meal per person, You want to add a little for the number you expect to stay 2 meals.

Pasta and salad. For 125 people, I would start with at least 8-9 bounds dry pasta total, which will make at least 16-18 pounds made salad, I think you may be short. For slaw type salads, I allow at least 20 pounds per 100.

Sandwich condiments are way short. See the sandwich event page for condiments per 100. The rest of this section looks OK. I would probably figure about a gallon of pickles and offer at least 1 bag of chips per expected. guest; they do keep. You will not have any fruit left.

Desserts are OK, I might do twice as many brownies; people really like brownies.

Beverages are short. Use the beverage planning page and for the folks who are staying 2 meals, count them as 2 people for beverages.

update
i wanted to update in case anyone was interested.
we ended up with less food than expected, time constraints limited how much i got prepared ( allow 3 or 4 more hours than you think you need to set up a party and hall!)
our approx totals were - we fed about 130 people
12lbs pasta salad -
4 large bags of chips -
2 lbs baby carrots, 4lbs brorc,1 large head califlower
3lbs starwberrries, 1 cantalope, 2 large pineapples
10lbs assorted cheese, 20 lbs deli cold cuts
1 head of lettace, 5 tomatoes, 2 lbs cherry tomatoes
1 jar mayo, 1/2 jars of brown and yellow mustard
10 - 12 pks soda, only about 20 bottles of water
100 servings of cake, 45 cupcakes, 1 pan rice crispy treats
1/2 sheet brownies, 12 dz rolls, 45 mini crossiants ,
and 2 large bags of m&ms, 2 dz cookies.

moat of the food amounts we had were right on target, except
the lunch meat -Way Too much left (25 lbs left - lots of friends and nighbors took some home)
so i would caution others to be careful how much meat to order- we had way to much, 4 servings per pound seems too generous.
