Are you ordering already cooked? These weights are for meat only (not including the onions and peppers, already cooked:
45 pounds beef PLUS 36 pounds chicken
The rigatoni, already cooked in a casserole, 80-85 pounds, depending on what else is being served. It is an unusual choice with the fajitas.

Hello Very unusual choice. They weren't sure.
What was settled on is approx. 180 people and Chicken and Beef (skirt steak) Fajita's. Great, I was thinking around 55 lbs raw beef and 40 lbs of chicken thighs (raw -boneless, skinless)and then equal amounts of onions and green peppers correct? Thank you so much for your assistance.

This will be plenty, even without the rigatoni. Maybe you can get them to have rice and beans instead of the rigatoni. Good eating!
