Tortelini for 100

09/24/09 		I need to find out how much tortelini alfredo to make as part of a buffet for 100 people. This will be one of three main dishes. How much should I buy if made fresh as opposed to dried?

09/24/09 		Tortellini are usually small and because they are uncommon, tend to be popular. Allow 5-6 small or 3-4 large per person- almost everyone will take some.
