Ok I know you are going to think I am crazy but my son is getting married and we are having a Maine lobster bake, some one else is coming in and cooking the lobster and corn over an outside fire. I will, with help be doing the rest. the menu is Potato salad, Marc salad with Maine shrimp,a hot rice dish. Chicken casserole with cheese and stuffing on top. I need help on amounts with 200 guest. Thanks for any help you can give. |

Potato salad 4 gallons per 100, marc salad is basically Caesar salad, see the plan for 100 page. Rice, 8 pounds dry per 100. Chicken casserole, in view of the lobsters and other dishes, 3/4 cup per person=150 cups= 38 quarts or about 9-10 gallons (one 9x13 dish holds about 2 1/2 quarts). You probably also want to look at the beverage page and at the plan for 100 page for bread. |
