You've saved my catering life numerous times - thank you thank you! I love your recipe for cheesy potato casserole. Need to scale it to feed 100 (no problem there - your recipe x10), but would like to bake it in 2 full steamer pans instead of roasters. Still 350 degrees for about 90 minutes?? I'll make the night before then refrigerate overnight - was thinking I should bump the temp a bit and the cooking time a bit. Is that what you'd do? Thanks so so much!! |

Don't bump up the temp, you will get dried out edges before the middle reaches 180. Do allow an extra 40 minutes or so baking time and use a quick read thermometer to check the temp in the middle, turning down to 200 when hot enough. |

Thank you thank you! I'm going to hold them in cambros when they're done, so if I pull them out when they read 180 and drop them in, they'll stay plenty hot, won't they? I need to travel with them around 5:15 p.m. for dinner service at 6........ |

I am looking for a recipe like cheesy hashbrown casserole , but I want to use the whole baby canned potatoes, this will be for a wedding reception, so i need a large recipe. Can this be made with sour cream, butter, chicken soup and velvetta cheese, and then poured over the whole canned baby potaotes. HELP!!! |

I am prejudiced about canned potatoes, I just don't like the taste, so I don't use them. It is no quicker than the frozen potatoes. Why switch? |

We had the whole potatoes at a wedding reception and really liked them. How would I do the sauce if this is what we want. the ones we've had were made with butter, velvetta, sour cream.not sure what else . they would not give the entire recipe |

Suggest you try the cheesy hash brown recipe at the bottom of the brunch page, use Velveeta for the cheese, mixing everything but the potatoes together and warming it, then pouring it over the potatoes. Make a family size batch and try it, it will give you a place to start. |
