| Irma 05/21/09 | Could you please tell me what size of chicken breasts (3 oz or 4 oz) to order for chicken breasts in a cream sauce? This will be the only meat with two vegetables, potato casserole, salad and rolls. I am cooking for 200 for a 6:30 dinner. Also how many breasts will I need. Thank you very much. | ellen 05/21/09 | 2 3 0unce would make a party type portion plated, if it is self serve, I would go with the larger piece. But that is a small serving and at least 1/2 the guests will still take two. I would suggest you see if a 5 ounce portion is available... |

| ellen 05/22/09 | The way to control meat costs on a buffet is to have someone serve the meat. If it is plated, of course that solves the problem. I would ake about 230 5 ounce for a buffet. |
