Hello, Thanks for all your great tips. I do have a question... (We are expecting about 150-170 peole) We are making Roast Pork for our main meat but I wanted another meat option as well... I'm thinking either Chicken Paprikash or cabbage rolls... (european flavors) my question is do I still follow the same amount of meat suggested for 150 or do I ease back and make both options for 100? Thanks :)

The thing about a second entree, is, it changes how people serve themselves. For example, if you make cabbage rolls, many people will take a roll along with their pork, so you have to add 4-5 ounces ready to eat pork PLUS one roll per person.
Or for pork plus chicken, you need 4-5 ounces ready to eat pork PLUS 3 ounces ready to eat chicken, or one piece, per person, plus 10 %. That way, you have enough for everyone to get their first choice and you don't run out.
