Hi Ellen, hope you enjoyed the time away! I am working on a wedding reception for 100. We are having Roast Turkey and Ham. In your experience which meat will I need more of or should I just plan on servings for 100 each? Yesterday Sauerkraut and sausage was added to the buffet as well. My question is, should I use the quantites you have listed on you site or would I need less becase there are several choices? I want to have enough food but want to keep costs under control for the bride and not be excessive with leftovers. The menu is as follows, any suggestions or changes you might have would be greatly appreciated: Appetizers while the pictures are being taken:

Hi, There is specific info on turkey plus ham in the holiday planning and shopping article at the top of big pots. You want to end up with about 5 ounces cooked ready to eat turkey PLUS 3 ounces cooked ready to eat ham per person. I would just add 2 ounces sausage per person, that's about 14 pounds, and the requisite amount of sauerkraut (about 1/4 cp per person, or 25 cups, which is 2 #10 cans). |
