Broccoli Rice and Cheese Casserole

02/10/09 		I would like to serve Broccoli/Rice/Cheese casserole at a wedding for 125 people. Can this be prepared in a large electric roaster? What quantities should be used? Thanks so much for your thoughts~

02/10/09 		You need 2 roasters-full to do this for 125 people. It is most attractive if dome in roaster cookwells (you can order an extra one and kepp it hot in the regular kitchen oven while the first one goes on the serving table in the roaster). But you can also make it loose and just spoon it into the cookwell- just not quite so crusty and attractive. This is usually made with cooked white rice (I would use Basmati for party rice), and is very nice if wild rice is used for part of the rice, you just have to precook it separately.
