I have a page on mac, slaw, and potato salads for groups in P\the Big Pots section. You need 8-12 pounds dry macarone product for 100 people, using the larger amoount if there are no beans or potato salad and with the "heavier" pasta such as rotini, So use about 2/3 that for this party, around 6 pounds. Ruth, the amount of people did not come through. A #10 can (the giant one) contains 24 half cup servings. You need 4 #10 cans or about 3 gallons to provide 100 servings. For 100 people, you want around 120 servings- 5 #10 can or 3 1/2 gallons. |

Yep, fudging is good. I would use the pesto pasta salad recipe, rotini pasta, and plenty of chopped egg added to make an Italian-influenced antipasto type salad. For veggies, think about what would be in an antipasto platter, shredded multicolor bell peppers, artichole hearts, tiny green beans, etc. I would use the new grape tomatoes instead of diced tomatoes- hold better and prettier. Also, don't be shy about the parsley; when I used to run my little restaurant, we used a VERY large amount of chopped flat leaf parsley, basically equal parts finely chopped celery and tuna, and 1/2-2/3 that much chopped parsley (leaves only- the stems get bitter) and people always complemented the "fresh, light taste". I would probably use mayo instead of yogurt here; use the very best mayo you can afford, definitely not miracle whip, or make your own! Canned tuna is avaiable at restaurant groceries in a great big can that looks like a #10 cut in half crosswise. One would be enough, unless you want it really really meaty. Freshen by emptying into a colander and rinsing before draining and adding to your salad. The 100 servings will be a generous amount for 80 people, but not way too much. Probably fine for 90 unless they are teens or lumberjacks, but if youe are worried you could slip in 1 more pound of pasta. |

You can multiply a small recipe without problems, you want about 7 pounds dry of macaroni to start.

Julie, all these items are covered in the plan for 100 pages and the recipes in Big Pots. I usually allow 1 piece of chicken and 1 sandwich (5 sandwiches per pound of beef) for each person with a mixed entree. |

What kind of roast? Prime rib, you want 1 pound raw per person. Sirloin tip or top round, 1 pound raw for each 2 persons. 14 pounds raw potatoes to make the potato salad. |

Hi, Karen, To have tender juicy beef with this flavorful cut, you want to cook "low and slow". I do like the simple oven pot roast done by seasoning, wrapping in foil tightly and oven-baking at 250 all day. Toss Salad I'm doing something like a house salad for 100 people at church. I know how much salad mix to buy but how many cukes, tomatoes, and purple onions do I need to buy? I'm planning on putting maybe 2 nice wedges of tomatoes on each, 4 slices of cukes and 1 purple onion ring on each salad. Thanks for your help. |

The new grape tomatoes are neater and easier for these salads- a pint will make about 30 salads, so they are economical, too. 1 cuke for 8-10, depends on size aand who is doing the slicing. Sliced thin, 2 1/2 pounds onions should be plenty. |

tossed Salade Ellen, My church is having a luncheon on 9/30. I must prepare a fix yourself chef's salad for 100 people. I'm going to order the greens from a local chain grocery H.E.Butt co. I can purchase mixed greens by the pound. But how much should I allow per person. There will about 8 condiments people can choose from: eggs, garbanza beans, grape tomatoes, olives (black & green). Look on the plan for 100 page, it tells exactly how much for about 7 different kinds of salads. Consider adding a julienne meat- ham is usual. Also shredded or sliced cheese. There is also info on salad bars and potato bars, which will help with ideas and amounts on toppings. |
