never did steak and shrimp for this many people.can you give me some pointers. want to have steak and shrimp, ranch potatoes,green salad, rolls, dessert and tea |

Good steak is quite difficult for this large a group. Basically you cook them medium rare, reheat the folks who want more done. |

We do this several times a year at our sports club. But the guests cook their own steak! We line up the catering grills and feed them charcoal, but it's up to them to cook the steak. We serve the raw steak to them on disposable plates and have clean ones next to the grill for when they're done. Melted butter and seasonings are out there for them too. Then they come in and get a real plate with the sides and stuff. It works well for us but admittedly this group knows and works well together. Jut a thought. |

If you must serve them, however, I suggest prime rib which isn't much different in price, is simple and impressive. There's another thread below in which I explain our process there. Happen to be doing another in two weeks! It's starting to take a life of its own.... |

I agree 100% on prime rib as preferable to steak for large group serving. |
