I have a bag of dried kidney beans that I have had for 4 years. Are they still safe to use in chili? What is the best way to prepare these for use? |

They are perfectly safe, but it may be hard to make them tender. I would bring to a boil in plenty of water,cover and refrigerate overnight, drain and then simmer over a nice low heat until tender, before adding anything. If they don't get tender, it won't ruin your chili. If they don't cook tender, you can freeze them in the cooking water and then cook further- sometimes this works. |
