I am preparing food for a wedding reception - 115 people. The menu consists of Chicken Fingers Shrimp Quiche Cucumber Sandwiches Crackers/Cheese Fruit **I think i am good on the fruit - 20 lbs total - shrimp about 20 lbs - I am figuring 2 per person on the quiche - 2-3 per person on the tea sandwiches -I also have tossed salad - bought 9 lbs lettuce, 6 lbs cherry tomatoes, cucumbers. I bought 80 oz of assorted crackers and cheese, but i am struggling with the chicken fingers. I thought about buying them already cooked/frozen but that might get expensive - any suggestions on the chicken and any suggestions to my calculations so far. The wedding is at 6:00 with reception following.

This is over a mealtime. People will not eat supper before they come, they will be hungry. Even though you have decided to use appetizer type foods, you need more food, about 1 1/2 pounds per person. Here is a sample plan:
Chicken Fingers- 1 pound for each 3 persons, 38 pounds I would add at least a great bread and spread selection, such as that described in the champagne lunch article, as this is a VERY light menu. With wedding receptions it is helpful to have a beverage and nibble service when the quests arrive, as they have about an hour to wait until the couple arrives after pictures and clothes changing. |

Thank you so much for your help. I am going to do the Greek salad - adding rolls, butter spread and dip for the fruit. I am going to get another box of 72 mini quiche so will work out 3 per person. We have the wedding cake, grooms cake and then i bought 4 boxes of cheese cake bites. **this wedding is a friend of mine and i have voluntered doing the food she requested. |

You're a good friend. Get about 4-6 more volunteers to help with setup, serving and clean up. You will be tired by the end of the day. |
