What kind of roast beef? Pot roast, round/rump roast, prime ribs? There is a whole article on roasting different cuts of beef in the holiday cooking section at the top of Big Pots- check there first. |

Emmajune, what is the occasion? Is it buffet or sit down, and what are the other dishes? What is your budget? For 130 people, you could spend $200 for chuck/shoulder clod or $800 for standing rib roast. |

OK. Informal buffet service, second meat available. I would make a chuck roast in gravy and I would get about 60 pounds raw boneless chuck plus 1 piece of chicken per person for the meats. |

Emmajune, as indicated in the quantity planning tables, you need about 85 pounds of chicken pieces to make chicken for 100 people if that is the only entree, so 80 pounds to make the second choice entree for 130 people should be fine. |
